Omakase

Omakase means in Japanese, "I'll leave it with you" (from Japanese entrust).

The expression is used at Sushi restaurants to leave the selection of the Sushi with the chef.

The chef prepares a series of plates, beginning with the lightest fare and proceeding to heavier and richer dishes.

Customers ordering Omakase style expect the chef to be innovative and offer them a surprise in the selection of dishes and ingredients.
