Kaiseki ryôri

Kaiseki ryori is a traditional Japanese course cuisine with a distinguished quality. Its origin was simple meals served at the tea ceremony centuries ago. Later it evolved into an elaborate dining popular among the aristocratic circles centered in Kyoto, an ancient capital of Japan.

In Kaiseki, we use only fresh seasonal ingredients, which are often locally grown, and prepare in the way that enhances their flavors. Finished dishes are presented on plates as the culinary art, while matching the seasonal theme of the meal.
